Peanut Butter Energy Balls
Sometimes, I get the strong and sudden urge to eat raw cookie dough. I know that’s not in my best interest for lots of reasons, so I whip up something that sort of mimics the taste and texture of cookie dough while also giving myself a more nutritious snack.
- 3/4 cup nut butter of choice*
- 1 cup oats
- 1/2 cup ground flax
- 1/2 cup coconut flakes
- 1/3 cup honey
- 1 tablespoon vanilla extract
- Optional: 1/2 cup chocolate chips, raisins, nuts, or any other mix in you would like
Mix everything together in a large bowl. Roll spoonfuls into balls and place them in a container. Refrigerate for about 20 minutes, then keep the leftovers in the fridge for quick and easy snacking later. You might want to make extra because the kiddies will love these, too!
*These are totally customizable. If you use a nut butter that is more runny than traditional peanut butter (like Nuts ‘n More), you may need to add more dry ingredients to get the right consistency.
